Quick & Healthy Stir-Fry Basil Chickpeas

You guys! It’s been so long since I’ve come up with a new recipe and I’m so excited to share it with you today. It’s quick, easy to prepare, and definitely healthy!

I cook everyday, and sometimes I just really want to skip those intricate and complicated recipes. Especially on busy days, I’d prefer a simple dish, but I’d love it if it’ll also please my palate.

Preparing a healthy meal is probably the last thing on your mind right now. We’re all so busy working, hustling, that it leaves us less or no time to cook at all. But, let’s change that. Instead of relying on fast food and ordering takeout, try this time-saving recipe that makes healthy food more exciting!

I love hummus, I love falafel, I love a vegan burger, I’m just addicted to chickpeas! They’re delicious and they’re a good source of protein.

I used canned chickpeas to make this recipe quick and easy, but feel free to use fresh ones. When choosing canned chickpeas, just make sure to check the ingredients and get those without preservatives and additives, just salt, water, and chickpeas.

For the spices, I won’t be including measurements since we all have different taste preferences. The flavor is really up to you, but I do recommend a lot, like, A LOT of basil leaves! This makes the dish aromatic.

Also, you could use any type of cheese. I use Fontina, sometimes Brie. I just love their flavor and when they melt, they make the dish taste like pizza. I swear!

And finally, I usually drizzle hot sauce on top and eat it with brown rice.

– Olive Oil
– 4 cloves garlic, minced
– 1 small onion, chopped
– 1 small tomato, chopped
– 1 can of chickpeas
– Ground black pepper
– A pinch of salt
– Dried basil leaves
– Cheese of your choice, chopped

1. Heat olive oil in a nonstick pan.
2. Sauté garlic, onion, and tomatoes.
3. Add chickpeas and stir.
4. Season with ground black pepper and salt.
5. Sprinkle dried basil leaves and stir.
6. Add cheese, stir, and let it melt.
7. Serve and enjoy!
